Allow several hours at Shilinxia, rather than treating the UFO platform as a quick roadside stop. Recent visitors report substantial walking/climbing even when using the lifts. 

Then have the driver take you onward to Gubei Water Town. Staying overnight actually makes sense here: you avoid having to return to Beijing after a long sightseeing day, and you can enjoy Gubei after the daytime crowds thin out.

Day 2: Gubei Water Town → Longqing Gorge → Beijing

Again, I would arrange the car before leaving Beijing, ideally through your Beijing hotel or a reputable private-transfer company. Ask for a fixed quotation covering Gubei pickup, waiting time at Longqing Gorge, and final drop-off at your Beijing hotel.

I would not simply ask a taxi driver at Gubei Water Town to take you to Longqing Gorge and hope to find another taxi afterward. Didi can certainly be useful in China, but remote scenic areas are exactly where I prefer certainty over saving a little money.

Will it be very expensive?

More expensive than public transport, certainly — but not necessarily extravagant, especially for two or more people. The important distinction is between a car with driver and a full private tour with an English-speaking guide. You don’t really need a guide simply to make these transfers.

I wouldn’t give you a fixed RMB figure without knowing your travel date and number of passengers, because long-distance car pricing varies considerably. Get 2–3 fixed quotes and make sure they include tolls, parking and waiting time.

Public transport would be cheaper, but I wouldn’t choose it for this itinerary. You would save money while losing a lot of time and flexibility — precisely the wrong trade-off when combining three fairly remote places in two days.

One other thought: this route gives you an interesting look at Beijing beyond the historic center. Beijing municipality is enormous; places such as Shilinxia, Gubei and Longqing feel much more like mountain-country excursions than conventional city sightseeing. That’s part of their appeal.
