This is the difficult one. Beijing would add more to a first trip than Chongqing, especially if the parents are interested in history. The Forbidden City, Great Wall, Temple of Heaven and old neighborhoods provide context that nowhere else quite replaces. Beijing normally deserves around 4–5 full days rather than being squeezed into a couple.
So if you actually have closer to three weeks, my preference becomes:
Chengdu → Zhangjiajie → Xi’an → Beijing
Then you could reconsider Yangshuo depending on the family’s appetite for another transfer.
I wouldn’t add Chongqing simply because it’s fashionable. It’s fascinating, but for this particular trip, it doesn’t solve anything your itinerary is missing.
One useful rule here: don’t ask which famous city you’re leaving out; ask whether adding it makes the family holiday better. With children and a preference for slower travel, an extra afternoon in a Chengdu tea house or an unhurried day in the mountains may ultimately be more memorable than another hotel check-in.
